Quick Shrimp Scampi

Shrimp is such a great shellfish as it is versatile and generally easy to cook with. The origin of Shrimp Scampi is not quite clear, in that, many say it was actually an American dish first prepared by Italians. Others say the origan is actually in England as early as the 1700’s but in the British version the shrimp is breaded. Either way, we have been making a version ourselves for years that is quick, easy and always turns out great.

Start by finely chopping the parsley.

Buy the best shrimp you can find. Be sure to peel and devein before cooking.

Slice a lemon in half.

This only calls for the juice of half a lemon. This recipe can be easily doubled for a larger crowd.

After prepping, time to start with melting the butter in a skillet.

Salt and Pepper the Shrimp

Just sprinkle a little salt and pepper on the shrimp to taste. As mentioned in this dish we only made 8 large shrimp to accompany a steak. This recipe and be easily double for additional shrimp.

Place the shrimp into the warm butter in the skillet.

Cook for only about 2 minutes on each side. This all pulls together very quickly, so have the ingredients prepped and ready to go.

Add the fresh lemon .

Squeeze a half a lemon right into the cooked shrimp, followed by the garlic. Next add the wine and let it cook down for a couple of minutes.

Following the wine add the chopped parsley. Save a bit of the 2 tablespoons of parsley to garnish in the end, if desired.

Red Pepper Flakes

The red pepper gives a bit of heat and color to the shrimp scampi. It can be omitted if there is a huge aversion to any spice.

And just like that it’s done! In just a few minutes it’s ready to serve.

On this night we cooked at our friend’s beautiful home in San Miguel de Allende, MX. The shrimp was served as part of surf and turf along with a porterhouse steak (that served 4!) and roasted veggies. It was so good!

Quick Shrimp Scampi

A quick and delicious shrimp scampi that makes a perfect accompaniment to a surf-n-turf dish or served over pasta.

Ingredients

  • 2 Tbsp Butter
  • 8 Shrimp, peeled and deveined
  • Salt and pepper
  • 1/2 Lemon, freshly squeezed
  • 1/2 cup White wine
  • 1 tsp (or more to taste) Red pepper flakes
  • 2 tablespoons parsley, finely chopped
  • 2 cloves Garlic, chopped

Instructions

  1. In a medium size skillet, melt the butter over medium heat.
  2. Salt and pepper the shrimp lightly.
  3. Add the shrimp and cook on one side until pink about 2 minutes. Turn and cook on the other side.
  4. Add the garlic and stir for just a moment.
  5. Add the lemon juice and parsley, stir
  6. Add the wine and cook off for just a minute until slightly reduced.
  7. Sprinkle with red pepper flakes.
  8. Serve immediately by placing on a platter with the sauce poured over the shrimp. Alternately, the sauce can be tossed with angel hair pasta with the shrimp placed over the top. Enjoy!
