Fresh and Healthy Green Goddess Dip

For my recent girls night, I wanted to serve a veggie tray with a side dip that would keep things healthy.

We have never been fans of ranch dressing around here so I am always looking for a great dip to go with vegetables. Hummus is a favorite, but tonight I wanted to keep the colors of my little appetizer set up bright, so I chose this dip

Simple, fresh ingredients; all just added to a food processor.  Note, no sour cream, mayo or yogurt to keep it dairy free and healthier to go with beautiful bright veggies.

Pre-chop the walnuts, then rough chop the parsley and cilantro. Break the avocado up into chunks. Then blend away!

An alternative to brighten up a veggie tray

Ingredients

  • 1/2 cup cilantro, rough chopped
  • 1/2 cup parsley, rough chopped
  • 1/2 avocado
  • 1/4 cup walnuts, finely chopped
  • 1/4 cup water
  • 2 tablespoons freshly squeezed lemon
  • 2 tablespoons Olive oil
  • 1/2 teaspoon white wine vinegar
  • 1 teaspoon ground coriander

Instructions

  1. Place all ingredients in food processor and process until smooth.  Chill until ready to serve.  Best if served within 24 hours.
