Grilled Salmon with Pineapple Salsa
We eat a lot of salmon around here. It’s so versatile, so easy to cook and so healthy. It also, can be found in almost any grocer. Here is another recipe made with the “perfect portion” salmon filets our local grocer sells.
This recipe screams summer, with the salmon in a simple grill served with an easy-to-make very flavorful pineapple salsa. The salsa is a no cook version; just chopping that can be done in minutes. Leftover salsa can be served the next day with chicken, pork chops or even a breakfast taco. We love pineapple salsa and hope you try this version of ours!
Just a few simple fresh ingredients combine together quick and easily, bright with flavor.
On this day, our local grocer was out of fresh whole pineapple. Fortunately, they had pre-cut pineapple so we picked up a package of that.
Dice the fruit and veggies into fine pieces. You can add or subtract jalapeno depending on how spicy you’d like it.
The final step in the salsa is to stir in the lime juice , salt and pepper. The flavors blend quite quickly after combining, while you grill the fish.
The salsa is all ready to go.
Grilled Salmon with Pineapple Salsa
Ingredients
- 2 cups pineapple diced
- 1 small red bell pepper finely diced (or 1 cup)
- 1/2 jalapeño, finely diced
- 1/2 cup red onion, finely diced
- 1/2 cup lime juice
- 1/4 cup finely chopped cilantro
- Salt and pepper to taste
- 1/2 teaspoon garlic salt
- 1/2 teaspoon white pepper, ground
- 1/4 teaspoon cayenne pepper
Instructions
- In a medium size bowl combine the diced, pineapple, red onion, jalapeno and bell pepper. Stir to combine. Add the cilantro, stirring once more.
- Add the lime juice to the chopped mixture, stir to combine.
- Salt and pepper to taste. Set aside.
- Heat the grill to high.
- Season the salmon with the garlic salt, pepper and cayenne pepper.
- Once the grill is heated place the salmon on the grill skin side down. (or in a grill basket). Grill for 5 minutes, being careful not to let the fire flame on the fish. Turn carefully and grill on the other side for 5 minutes more. The fish is done when firm to the touch of a spatula. Turn again if needed.
- Once the fish is done, remove from the grill. Serve with the pineapple salsa. Enjoy!
