Easy Oven Barbequed Chicken

Even before we were Texans, we loved all things barbeque. We’ve learned a lot more about barbequing, smoking and grilling in the 20 years we’ve lived in Texas. Sometimes, in the dead of winter or when time does not permit, we’ve come up with an our oven version of our smoked-barbeque style chicken. This version is easy, with just a few simple ingredients, and quick for a weeknight meal too.

The recipe is just chicken, garlic salt, store bought barbeque sauce and good peach jam. That’s it! It could not be any simpler. Start with shaking a good amount of garlic salt on all sides of the chicken.

Place the chicken in a zip top bag.

Pour the Sauce into the Bag with the Chicken

Seal it up and place it in the fridge for an hour. Because this recipe is for the oven, you don’t have to worry about the flame causing the skin to burn or “bark” on the chicken.

Once the oven is warmed to 425 degrees, place the chicken in a shallow, oven proof dish and pop into the oven. Discard the marinade.

Ready for the oven! (Note: on this night we only made 4 thighs since it was just two of us. But they were huge! About the quantity of 6 regular size thighs)

While the chicken is cooking for the first 25 minutes, make the sauce. Pick your favorite store bought sauce. We like a good honey sauce and Sweet Baby Rays makes a great one. A fun note about our peach jam from Blackburn’s, is that it’s from a small town called Jefferson Texas east of Dallas. We found it in the town years ago originally and now our local grocer sells it. It’s a great jam on toast too!

Baste the Chicken with the Sauce

After basting cook for about another 7 minute or so. Turn, baste and cook for another 7 minutes. Remove from the oven and cover for 10 minutes with aluminum foil while finishing up the rest of dinner. That’s it. It’s that easy! The chicken stays so moist and picks up a great barbeque sweet flavor.

Save a little of the sauce to serve on the side if desired. On this night we served with air fryer fingerling parmesan potatoes and sauteed asparagus. Super simple meal cooked in under and hour.
