Simple Pico de Gallo

This is the simplest ever recipe for a delicious Pico de Gallo. All fresh ingredients and made in under 10 minutes. Pico de Gallo translates to “beak of the rooster,” as it is originally thought that this salsa was eaten pinching the thumb and forefinger together, like a beak. Today, it’s also called “salsa fresca,” or “fresh salsa,” which seems more in tune with what it really is. Regardless of the name, this is an easy recipe to go with any Mexican dish

After a recent trip to Mexico it was time to invest in a Molcajete. This is a traditional stone mortar and pestle used widely in Mexico for a variety of things. We mostly commonly see a molcajete used to make guacamole or salsa fresca. They can be purchased at most specialty kitchen stores or online.

If using the molcajete start by mashing the garlic well inside. This gives the bowl the garlic flavor without leaving too many pieces. If not using the molcajete, the finely diced garlic can be added with the rest of the vegetables.

Add the tomatoes and onions next and stir well. This recipe is so flexible. If don’t love onions, add less. Add more tomatoes, if desired.

Next, add the jalapeno, then the cilantro. Stir well.

Squeeze in the tablespoon of lime juice. Next, add a generous amount of salt and pepper. Taste. Correct with additional lime, salt and pepper as desired.

That’s it! This not only goes well with chip and any Mexican dish, but also well eggs or even inside a green salad. Very easy, and super fresh.

Pico de Gallo

Pico de Gallo, is also known as Salsa Fresca. This simple, fresh recipe takes just minutes to make and goes well with any Mexican dish. (or any dish at all!)

Ingredients

  • 2 cloves of garlic either mashed or finely diced
  • 3 Roma tomatoes, finely diced
  • 1/3 cup white onion, finely diced
  • 1/2 jalapeno, seeded and finely diced
  • 1/4 cup cilantro, chopped
  • 1-2 tablespoons freshly squeezed lime juice
  • Salt and pepper to taste

Instructions

  1. If using a Molcajete, mash the garlic into the bowl until it makes a paste then almost dissolves. Remove any leftover pieces.
  2. Add the tomatoes, onion and jalapeno. Stir well.
  3. Add the cilantro, stir.
  4. Add lime juice and a healthy amount of salt and pepper. Stir well. Taste. Add more lime juice and salt and pepper to taste. Enjoy!
