We got an air fryer! A couple of our kids and my sister have an air fryer and they love it. We have an old, old “Fry Daddy” fryer, which smells up the house every time we use it, not to mention it’s not very healthy. So we jumped on the Prime Day bandwagon and ordered one.

We got the Cosori brand, which has very high ratings (from the family too) We purchased the version: HERE. Today’s adventure we’ll share our very first experience using it.

We literally took it out of the box and said, “what can we make now?” It arrived a day earlier than scheduled so we had nothing planned. (thanks Amazon Prime). Fortunately, this beauty of a zucchini had just been picked from the garden, so we thought we’d try Zucchini Fries.

We did not use that whole large zucchini.

The strips are cut into 3/4” wide slices by about 3” long. This was about 1/2 that massive zucchini or the equivalent of 2 medium zucchini.

Just set up an assembly line on the counter. Hint: we use heavy paper plates for the dry ingredients; less mess to clean up.

We did not have Italian style breadcrumbs in the house. We should have added Italian seasonings for more flavor, but it was a “testing kitchen night.”

All prepped and ready to dip those zucchini. Again, with more experience, you could add a variety of herbs to add flavors.

Hint: dip all the zucchini before starting the air fryer. It will go pretty fast.

Lay the zucchini in one even layer. This will ensure they all cook properly.

They all fit perfectly. It already looks so good!

This was a very different step for us, to spray cooking spray on the veggie. But that’s the beauty of an “air” fryer, less oil; more air.

Only 8 minutes of cooking and they were done!

They were cooked perfectly, just beyond al dente. Note: there is one that did not get enough cheese so you can see the flour mixture. It tasted fine, just not as pretty without the golden crisp.

We did not have anything to dip them in but a jar of last year’s homemade salsa. It worked out great and they tasted delicious. We are looking forward to our next air fryer adventure!

Zucchini Fries

Delicious appetizer made with fresh zucchini pulled together then cooked using an air fryer, in minutes
Prep time: 10 MinCook time: 8 MinTotal time: 18 Min

Ingredients

  • 2 medium zucchini
  • 1/2 cup all purpose flour
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 tablespoon milk
  • 3/4 cup Italian seasoned panko breadcrumbs
  • 1/4 cup Parmesan cheese, finely grated
  • Nonstick cooking spray
  • Dip for serving (Marinara, Ranch, Salsa)

Instructions

  1. Cut the zucchini in 3/4 inch thick strips
  2. Mix together the four, salt and pepper in a shallow dish 
  3. Whisk together the effs and milk in a separate dish. 
  4. Combine the breadcrumbs and Parmesan cheese in another dish.
  5. Coat each piece of the zucchini with the four, then dip in the egg and then roll in the breadcrumbs.  Set aside.
  6. If using the Cosori model: (or follow the instructions of your air fryer)
  7. Press menu to select the Preheat function.  Adjust to 350 degrees and press Start/Pause.
  8. Place the coated zucchini evenly into the preheated air fryer and spray with nonstick cooking spray.
  9. Press menu repeatedly to select the Frozen Foods present.  Adjust the time to 8 minutes and press Start/Pause.
  10. Shake the basket halfway through cooking.
  11. Serve with a side dip of your choice.  Enjoy!
