30 Minute Sheet Pan Salmon
Looking for an super easy, super fast, and super healthy meal? Sheet Pan Salmon fits that bill perfectly. Fresh veggies and perfect portions of salmon, tossed with a bit of olive oil and seasoning, make a complete meal. It’s all cooked on one sheet pan for minimal effort with maximum yumminess.
The chopping is minimal, starting with the baby Yukon gold potatoes. Buy potatoes as small as you can find to ensure they fully cook. If you cannot find really small potatoes, cut into quarters.
Toss the cut potatoes in the olive oil.
Add the salt, pepper and Italian Seasoning. If you don’t have Italian Seasoning, dried oregano and basil would work well too. The potatoes are well covered, but not dripping in the olive oil.
Get ready for the oven! Place the salmon on parchment paper on a sheet pan. Drizzle olive oil and salt and pepper on the salmon. Add the potatoes one on side of the salmon. Add the asparagus and drizzle olive oil on it. Finally, top with salt and pepper.
It’s ready for the oven, in about 5 minutes.
Bake at 375 for about 20-25 minutes until the potatoes are tender and the salmon firm to the touch with the back of a spatula.
Squeeze lemon on the salmon and top with chopped fresh basil if desired. No serving dish necessary, simply serve from the sheet pan.
This fast and easy recipe can be doubled easily. Also, cherry tomatoes can be added to the potatoes. The asparagus can but substituted for green beans or small broccoli crowns. The key is to have the veggies in pieces that will roast within 20 minutes!

Ingredients
- 2 salmon filets
- 12-15 baby Yukon gold potatoes, cut in half (the smaller the better)
- 1/2 bunch asparagus, trimmed
- Olive Oil
- Salt and Pepper
- Italian Seasoning
- 1-2 lemon slices
- Sliced fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375 degrees.
- Toss the potatoes in a bit of olive oil, so they are coated well but not dripping.
- Salt, pepper and add Italian Seasoning to the potatoes. Toss well with a spoon.
- On a sheet pan covered with parchment paper, place the salmon filets. Drizzle small amount of olive oil on top. Salt and Pepper.
- Pour the potatoes on one side of the salmon. Spread out.
- Place the asparagus on the other side of the salmon. Spread out. Drizzle a small amount of olive oil on top. Salt and Pepper to taste.
- Bake for 20-25 minutes until the salmon is firm to the touch with the back of a spatula and the potatoes are soft.
- Remove from the oven. Squeeze lemon on the salmon. Top with basil if desired. Enjoy!
- Fresh cut green beans or small crowns of broccoli make a great veggie substitution. Toss in a few cherry tomatoes too if desired!
- This version is for 2 but can be easily doubled and still fit on the same sheet pan
