Cilantro Lime Rice
Do you like to try different rice dishes as a side? A great flavorful, fresh rice good for seafood or Mexican food is Cilantro lime rice. It’s super easy to make, with just 3 ingredients; rice, lime and cilantro.
Start by zesting the lime. It will cook right in with the rice.
In this method we use our very old, but very trusty Cuisinart rice cooker. This recipe will work in any rice cooker or even on a stovetop.
Always, always rinse the rice first. And, use the same measuring cup for both the rice and the water to get exact amounts.
This recipe calls for water and the lime juice, but you can also use chicken stock or a combo of stock, water and lime juice. Cook the rice according to the package instructions or with the automatic timer on the rice cooker.
When the rice is done, add the cilantro and stir well together.
That’s it! Super simple and a great variation as a side rice dish.
On this night we had it with our Chicken Enchiladas Verdes. (recipe below!) and a simple salad with bottled Cilantro-Lime dressing.
Cilantro Lime Rice
Ingredients
- 1 cup long grain rice Rice, rinsed in water and strained
- Zest of one lime
- 2 cups liquid - the juice of one lime and water for the remaining
- 1/4 Cilantro, finely chopped
Instructions
- In the rice making vessel (or in a saucepan if using the stovetop method) add the lime zest.
- Add the rice and water/lime juice to the rice maker. Cook per the instructions of the rice maker or the package instructions if using the stovetop.
- When the rice is complete, add the cilantro and stir well.
- Pour to a serving dish and top with a bit more cilantro if desired. Enjoy!
