Easy Blueberry Loaf

You have company coming for the weekend, or you are having a girls brunch, and you need to pull a menu together. Or the kids need a healthier afternoon snack? Along with your savory breakfast dishes, or instead of store bought snack, Blueberry Loaf is a great homemade alternative. Best part? It’s easy to make, and then, it makes the whole house smell good while baking.

The nice thing about this bread is that is it comes together quickly without pulling the stand mixer out. Just stir by hand!

Start by mixing the flour, sugar, baking powder, baking soda and salt.

After mixing the dry ingredients, take the butter, cut into chunks and incorporate. This is usually done with a pastry cutter but if you don’t have one a knife works just fine. I also testing this recently by keeping the butter out overnight letting it soften. That worked just as well too.

After the butter add the beaten egg, orange peel, orange juice and stir all together.

Next, add the blueberries, stirring until just mixed in. If using the chopped pecans, add them at this time too.

Prepare a loaf pan with either cooking spray or a bit of oil and flour. Pour the mixture into the pan and pop in the oven. Be sure to keep an eye on as the house begins to fill with the delicious aroma.

Blueberry Loaf

The loaf is done when a toothpick inserted in the center comes out clean. Let cool for a bit then remove from the pan onto a cooling rack. Serve with a bit of butter on the side.

This will keep about 5 days covered tightly and not refrigerated. If it lasts that long in your house!

Blueberry Loaf

An easy to make, crowd pleasing loaf made with fresh blueberries. Great for breakfast, snack or anytime!

Ingredients

  • 2 cups sifted all-purpose flour
  • 1 cup sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 cup butter
  • 1 egg, beaten
  • 1tsp. grated orange peel
  • 3/4 cup orange juice
  • 1 pint fresh blueberries
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Sift the flour, sugar, baking powder, salt and baking soda into a large bowl.
  2. Cut in the butter until the mixture is crumbly.
  3. Add the egg, orange peel, and orange juice all at once, stir just until the mixture is moist.
  4. Fold in the blueberries and then pecans if using.
  5. Spoon the mixture into a greased 9x5x3 in. loaf pan.
  6. Bake at 350 for 1 hour and 10 minutes. The bread should start to pull from the sides of the loaf pan and a toothpick should come out clean when inserted into the center. Enjoy!
