Honey Dijon Sausage & Veggie Sheet Pan Dinner
Sheet pan dinners are the ultimate solution for busy weeknights, offering simplicity without sacrificing flavor. This recipe brings together hearty vegetables, smoky Polska Kielbasa sausage, and a luscious honey Dijon sauce for a dish that's as easy to prepare as it is delicious. And, it all comes together in around 30 minutes.
The key to the veggies is to cut them into pieces that will roast for similar times. Use the smaller baby Yukon gold potatoes, cut the carrots into small slices and the onion in bite size pieces.
Place all the veggies in the bowl ahead of tossing with the sauce.
Slice the sausage at an angle.
Next, it’s time to make the sauce. In a small bowl mix the honey, mustard, olive oil, cider vinegar and spices. Whisk until combined.
Pour the sauce over the veggies and toss with a large spoon.
Add the sausage and toss some more.
Pour the sausage and veggies onto a parchment lined baking sheet.
Pop in the oven for 20-25 minutes and it’s ready. With a balance of sweet, savory, and a hint of tang, this meal is perfect for cozy evenings without spending a lot of time in the kitchen.
This honey Dijon sauce brings sweetness with a bit of sharpness that pairs nicely with the hearty vegetables and smoky sausage. Enjoy!
