Lobster Tails with a Creamy Garlic Sauce

The hardest part of the dish (because it’s not really hard overall) is butterflying the lobster tails. Using kitchen scissors, cut through the top shell of each lobster tail, stopping at the base of the tail. Gently lift the meat, keeping it attached at the tail end, and lay it over the shell. This creates a "butterflied" presentation.

Next make a simple butter sauce to broil the lobster tails. Add, garlic powder, paprika and white pepper to two tablespoons of melted butter.

Pour the butter mixture over the butterflied lobster tails, placed on a foil covered baking sheet. When the broiler is ready, place the lobster tails inside. Keep a close eye on them as they will char easily.

The sauce technically can be made while the lobster tails are in the oven, or you can make just before and keep warm.

Melt the butter in the saucepan. Add the garlic and stir.

Next add the white wine and deglaze a bit. Let it reduce slightly.

Add the parmesan cheese and heavy cream. Let it melt while stirring. Finally, add the lemon juice, lemon zest and pepper. Taste and correct if necessary with pepper and a bit of salt. Finally add the parsley and stir all together.

Golden brown and perfectly done. As seen below, the shells themselves can become a bit charred but it will not change the flavor!

This dish comes together very quickly and makes a nice presentation. It is delicious served over mashed potatoes, wild rice or even a bed of freshly sauteed spinach.

Ingredients

For the Lobster Tails
  • 2 lobster tails
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp white pepper
For the Sauce
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped (+ more for optional garnish)
  • Salt and white pepper, to taste

Instructions

For the Lobster Tails
  1. Using kitchen scissors, cut through the top shell of each lobster tail, stopping at the base of the tail. Gently lift the meat, keeping it attached at the tail end, and lay it over the shell. This creates a "butterflied" presentation.
  2. Brush the lobster meat with melted butter and sprinkle with garlic powder, paprika, and pepper.
  3. Preheat your oven to broil and place the lobster tails on a baking sheet. Broil for 8-10 minutes or until the meat is opaque and cooked through. (keep an eye on them as the tails can burn quickly)
For the Sauce
  1. In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Pour in the white wine to deglaze. Let it simmer for 2-3 minutes to reduce slightly.
  3. Stir in the heavy cream and Parmesan cheese. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.
  4. Add lemon juice, zest, salt, and pepper to taste. Stir in parsley.
  5. To finish, plate the lobster tails and drizzle the creamy lemon garlic sauce over the meat. Garnish with parsley.
  6. Serve with mashed potatoes to soak up more of the sauce. Enjoy!
